Are foods with a “Low Glycemic Load” permitted while on CN, and on the Carb Nite itself, switch to High GI foods….or is the Low Glycemic Load not worth calculating? I have no weight issues, just looking to see how to vary my diet in the near future. Thanks.
No not really, as per the book and many suggestions your goal is for glucose type starches. High glycemic food items. I mean instant oatmeal seems to be okay in a certain way, other than that not really. What were you wanting?
not sure that i worded the question correctly. so I typically do a Carb Nite either once or twice per week. On other days that are low carb, are Low GI/Low GI Load foods acceptable, or do they spike insulin?
this certainly depends. Things like bell peppers, avocados, and spinach are considered “very low GI” you could go to town on these no problem. Things like onions, peas, beans, milk, peanuts are “low GI” these are fine on ULC days but you really want to be cautious on carb numbers that can accumulate quickly from these.
