I'm currently undergoing the 10 day Ultra Low Carb prep phase that preceeds my first carb nite. I have been doing some calculating and found that I may have been exeeding my usable carb limit. I typically eat 1 head of cauliflower, 2 whole onions, 4 Jalepenos, 1 can of green beans and 1 head of lettuce each and every day. I have been looking into some of the usable carbs from these foods and with the volume I consume it looks like I'm right at the 30g threshold of usable carbs – if not over. However, all the usable carbs I intake come from vegetables and the neglegeable amount from eggs (which I always make sure to eat with bacon). I am extremely active at work – I work on a drilling rig and am on my feet walking/ working a lot of the day and I usually do a short, but intense workout 5 days per week. (I don't know if the exercise will negate any overconsumption, but want to provide an accurate picture of my situation). Would carb nite just result in fat gain the way I'm going?
