Salami and pepperoni help me out.  A couple ounces a couple times a day is pretty easy. Fat is higher than protein, which helps my daily totals if I get too many lean meats at dinner, etc.

I cut out the spanish/italian meats. They're awesome for fat and protein but they're very high in salt. I'm carrying no where near the amount of was I was since I droped them last week.

Very true, they are salty, so use smartly.

I also forgot to mention that on days when I work out in the morning, I have a protein shake with whey + casein that puts me at 55 g protein without any fats.  Could use some high fat ideas for that as well.  Would adding some heavy cream to this shake be ok?

I have been doing this lately. Chocolate casein and unflavored whey, some water and some cream, and it tastes like cookies and cream! My casein has ace-k so I do this on evenings after a workout only. Try to get 50/50 ratio in this time frame.

So sometimes I end up with a fair amount of protein and not enough fat on ULC days.  In this situation, I need to turn to high fat, low protein, low carb foods.  So far the ones I can think of are avocados, oils/fats, and certain nuts.  I don't think I'm about to start chugging heavy cream either.Anyone have any suggestions here that I'm missing?

Keep virgin coconut oil in the fridge. When you need more fat, chip off a chunk and eat it. I hate cooking with the stuff, but somehow, just eating it like that is good (and dare I say - tasty)

I remembered recently that most cuts of rib have a strong fat content.  Most notably spare ribs, which I had last night. As far as Coconut Oil goes, I'm not a big fan of it raw.  I'd probably choose butter or drink some cream before eating coconut oil, but that's just me.  Different strokes.
