(Copy and pasted my response from another post so these may look familiar, but no telling where that post it located…)
These are the typical dinners/meals I make, and I make enough that night for dinner so that my husband can take the leftovers to work the next day.
ULC ideas are bunless burgers, taco salads (ground turkey or fajita meat), boiled eggs, tuna salad, steak, chicken wings, stuffed chicken breast, bacon wrapped cream cheese stuffed jalapeños, stuffed bell peppers, roast, quiche, salmon, & meatloaf (in place of breadcrumbs I use parmesan cheese and crushed pork rinds.)
I also really like rotisserie chicken for some fast easy protein. I purchase one then debone it and put the chicken flesh into containers and keep it in the refrigerator for a snack or meal. I also like to sautee up some bacon in a wok, add chopped cabbage and onion into the hot bacon grease, then toss in the rotisserie chicken with some hot seasoning (cayenne, or red pepper flakes) curry, ginger, and a sweetener of your choice (I like stevia for cooking). Very good ULC stir fry.
