Carbs in Kimchee

    The book says Kimchee has 0 usable carbs. Now as far as I know, and a quick check on the packages in the supermarket will also confirm this, also I talked to a Korean lady who has her own kimchee store, kimchee is always prepared with sugar added. because of the fermentation process and the taste. Some kimchee even has Ace K in it, or other sweeteners, so be careful and check the label.

    Maltodextrin i know isnt considered as a sugar but will send your bloods through the roof! I know there is heaps of sugars like that that arnt recorded as sugar!

    Well usually Kimchee has normal sugar, plain old sugar in it.

    Most commercial kimchi has sugar in it. I'm not sure how much of it is left after fermentation though. Then again most commercial kimchi isn't properly fermented at all. Do what I do: make your own kimchi!

    Yes, making your own is the only option. Or put it in your backload, I eat some with rice in the evening, just a small amount though, not too much.
