DH Curry Cauliflower recipe question

    I have recently made this recipe that was features on the DH page.  It is sooo good.  It calls for 2 cups of cauliflower, 1 tbsp of coconut oil and I used the lower fat unsweetened coconut milk…along with spices.  Is this something that one could have everynight on the ULC week?  I know typically, or heard cauliflower is more carbohydrate rich than other vegetables?Secondly are all vegetables OK...for instance on ULC week is a large salad ok daily?

    The green veggies and the cauliflower recipe is ok. Now a large salad…depends on what is in the salad. Carrots are high glycemic not good. If its lettuce or spinach you're ok.

    Cauliflower has two usable carbs per cup.  Use a nutrition tracker like FitDay or MyFitnessPal so you can input recipes and see if they fit into your ULC days or not.

    However, with carrots it takes a lot to be significant. The standard portion for the GI scale is 50 g of carbohydrate... that's about 4 cups of chopped carrots. That's one of the criticisms of the GI scale, doesn't account for portion size. A much more significant scale, as Kiefer has pointed out, is the insulin index.

    Sometimes it's best to put the “warning sign” up with stuff like fruit or veggies…because it tends to get carried away. Moderation is key though
