Is Gluten Free Flour Really Gluten Free . . .?

    I'm hoping Big Tex will give his opinion on this 😉Are the flours that are made from things like corn and other substitutes still as irritating to your gut as wheat flour? Is rice flour somehow better?

    To add to this, I see things like oat products being advertised as 'gluten free' but I've heard that they can be just as bad.

    Depends on the company and what they use as for their ingredients. Sometimes what is irritating to people's stomach gut is grains, not entirely gluten free. Which is a whole other ballpark, and even more…frustrating. Some Oats are gluten free, again depends on the ingredient and company.

    Okay, so rice is pretty much the only 'safe' option?I was thinking of buying a whole load of rice flour, but can't find many recipes (http://www.bbc.co.uk/food/rice_flour) that use 100% rice flour.

    It can be safe yes. White Rice Flour can be verstile with all recipes. I've seen it work by just using that, instead of having potato starch, tapioca starch, etc. Even the package contains a recipe or two that shows it. At least Bob's Red Mill Gluten Free White Rice Flour does

    I actually bought an “all purpose gluten free flour mix” containing rice flour, potato starch, corn starch, guar gum

    I just take a regular recipe and sub out regular flour with plain white rice flour.  No problems so far.  Makes great cookies.

    That's what I did with the banana bread recipe I posted, which turned out great. Although the cooking times needed adjusting.I tried making pancakes with GF flour last night. Disappointing to say the least.

    Hmm. Does anyone know of a recipe book with a focus on rice flour? I'm slightly sensitive to almonds and coconut so I'm excluding them, and loads of wheat-free recipe books rely heavily on them.

    Did the flour mix have xanthan gum added to it? That usually messes up making pancakes...I have been there.

    I did that last night; I used a recipe that included a ripe banana in the batter.  Perfection.
