Dr. Rocky PatelParticipantWhat I've done recently is get 2 lbs of 80/20 beef and 2 lbs of bacon and have the butcher grind them together then make patties out of that with some finely chopped jalapeño in it. Omg is it good. Oh and always have some bacon on the side with those patties
That sounds like money! How about trying ground pork though...we used to have that sort of mixture in a cornbread stuffing mixture for Thanksgiving, but the best part was the actual meat from the mixture. Pork + beef = Pure Awesomeness!Anybody eating chicken wings as a basic meal? That's what I get for lunch somedays. Salad and about 6-8 chicken wings. Sometimes I miss being in South Korea, they have a pork product, kinda like a ham that is absolutely awesome pan fried. As long as you get the little more expensive products it was great. The cheap stuff was horrible though...tasted like scrapple. No offense to the scrapple lovers out there. 😛
I use chicken wings as a "treat" once a week on ULC days, but i usually have bacon with it ;D

CptSmashMemberI was assuming you put bacon on everything! I think I might try having a grilled peanut butter and jelly sandwich, with bacon in the middle!

Richard SchmittModeratorI saw this picture that someone made a bacon basket and put a salad mix in the bowl…my thinking is actually make a Bacon Basket with no holes, put ground beef and eggs in the center and eat that way!

Jonathan H BloughParticipantIs anyone else concerned about sodium nitrite with the vast quantities of bacon being consumed?I was under the impression that sodium nitrite created carcinogens when exposed to high heat or an acidic environment (e.g. frying pan and human stomach), so I typically buy bacon that doesn't contain it.Unfortunately, it usually costs at least twice as much as conventional grocery store bacon, so getting to the 10lbs per week level would be expensive, and I'd rather not waste the money if there is really nothing to worry about.

I try to stay away from bacon with preservatives in it as well. I usually only get a pound or two per week, though because of the cost. Then again, all meats that are better for you end up costing more relatively(e.g., pasture-raised, grass-fed). I really wish I were closer to the source.

Lesli BortzParticipantI'm actually pondering the nitrate question as well. I tend to fry it and I know I overcook it. So I read that if you baked it then it was okay….But I'm going to do some searches - I'm not sure where to get nitrate-free bacon. I go through almost a pound a day sometimes so I need to find something decently affordable!
