    You can buy coconut butter.  It tastes really good and is more nutritious than coconut oil and it has some fiber in it.  It's a great option if you don't mind a gram or two of trace carbs.

    Coconut butter is delicious. I can put away half a jar without thinking about it. Pretty easy to make too – buy some unsweetened shredded coconut and throw it in a processor, a lot cheaper than buying it at Whole Foods or wherever

    i tried doing this but it ended up hard as a rock after a day in the jar

    if it even came out of the jar in solid pieces this would be no big deal but you try to spoon it out it just crumbles.. not worth the hassle.. ill probably try a store bought one sometime as they look to have a better consistency

    Store bought will still do it. Consider: all it is is blended coconut. Is coconut liquid at room temp? 😛And I meant put the jar in a hot water bath for 10 min, it should liquify. Just a pain in the ass if you want to use it right away. I just jam a fork into it and eat big chunks. 🙂 I also used to just eat handfuls of shredded coconut tho.

    I made it this morning, didn't come out in a smooth consistency but works. Done this method with almonds and peanuts!

    I absolutely love coconut oil. Recently tried roasted CO as I was sent the wrong type (they corrected their mistake but allowed me to keep the original), it's an acquired taste lol but works well in cooking.

    If you ever have trouble getting fats in, I made an awesome concoction this evening and wanted to share! Now here it is!1 cup unsweetened almond milk (vanilla) blended with some ice and isolate. As much as you desire. Make into a milk shake type ice cream. Put in the freezer for about 10-15 minutes to get it nice and cold. Now if you have coconut butter (homemade is better) take a couple drops or clumps and dump in that shake. It'll harden to the shake leaving you with coconut butter "chip clumps" to eat out of the cup! Now you can blend cocoa powder with the butter and put in molds for "candy" or the same mix.
