Possibly, but I believe it to be a suggestion of safety. Kiefer has said only about 50% of people have any kind of reaction and the reactions can vary in intensity from negligable to serious. I think Gluten is fairly overblown. Youd know if you have problems with Gluten. If you are doing the ULC meals right you are probably getting less Gluten than the rest of the population eating off the food pyramids. So having a few meals a week that may contain some Gluten probably wont kill you.

Robert GrayParticipantI've found a few winners on Chocolate-Covered Katie's “healthy dessert” blog. A few of her recipes are based on blended chickpeas or oats, but most of her cookie recipes can be made with Bob's Gluten Free flour and the sugar can be switched out for dextrose without problem. So far, I've made her copycat Luna bars and “skinny snickerdoodles” with great success. If Katie weren't a strict vegan, I'd be at her door with a bouquet of flowers and a hand-written sonnet.http://chocolatecoveredkatie.com

Richard SchmittModeratorBob's Red Mill GF AP Flour is not a good idea to use at all with CBL/CNS. It contains an ingredient that will cause a slow digesting in carbs, from the Brown Rice I believe.

+1 ^. any GF flour made with brown rice flour is going to be a slower digesting carb (not good for CBL). People should be looking for White Rice Flour, Potato Flour/Starch, Tapioca Flour/Starch. I found an all-purpose flour at whole foods made by "Gluten Free Pantry" that contains the ingredients just listed. Pretty cheap, and very versatile.

Robert GrayParticipantIn that case, I have a bag of Bob's GF that I don't want to waste, so is there a way to accelerate the absorption rate of the flour by mixing it with some leucine or adding extra dextrose or a fruit sugar to the mix? I'm still trying to learn the ropes on this sort of thing.
