On page 54 of Carb Back-Loading, we are warned that eggs can spike insulin levels, and a footnote to the following study is given: http://ajcn.nutrition.org/content/66/5/1264.full.pdfHowever, this study seems to indicate that eggs produced a smaller insulin response than any other food they tested aside from peanuts. Beef and fish were among the protein sources that have a higher insulin index than eggs, and those foods are CBL staples.  What is the reasoning behind the suggestion that eggs spike insulin?

I am not being facetious…but did you search for the answer? I only say it because I think it's been talked about a decent amount. I don't actually know the answer so I can't directly respond but if you want a fast answer I'm almost positive you'll find it.

An egg yolk contains about 0.5g of leucine.

Thanks. I've been doing some cursory research on leucine and insulin. I came across this study: http://www.metabolismjournal.com/article/PIIS0026049508003120/abstract"The data suggest that a rise in glucose concentration is necessary for leucine to stimulate significant insulin secretion"Or, in visual form: http://i49.tinypic.com/10xr2as.jpg
