Could I turn my whey isolate into hydrosolate with a good digestive enzyme supplement?

Yes-ish.I'm sure it would have slightly different effects as opposed to taking in hydro, but it should have the same basic effect.It seems that this is part of what CarbShock is intended to do, via the method you mentioned.
