if I mix maltodextrin or dextrose with oats does this balance the gi of the two items somewhere in the middle?
    maltodextrin gi = 105
    oats (porridge) = 63?
    combined food = 84

the idea I was thinking here is that this would then raise up the gi of something low/medium to the high category. am I correct in thinking this?

It could very well raise the glycemic response, depending how much you put in the oats. How much of a rise? I don’t know.

^ Exactly. If you use two equal parts then you divide by 2, but if you use a 3 to 1 ratio, then you’d divide by 4 (etc. etc.).

But I’m not sure how you’d determine the “parts” with any precision. Weight? Volume? Carbs?

If you like it, white rice would be a better choice.
