Walter NorwoodParticipantHey guys – I wanted to get the collective pulse on the use of 100% pure maple syrup on CarbNite. I've typically used a heavy dose of dextrose and honestly, it's not very enjoyable. I'd like to start using some maple syrup. Does anyone see any problems with this?

Sucrose is 50/50 fructose-glucose.

David M PopeParticipantThat's an interesting way of thinking about it—glucose syrup is 100% dextrose (another name for d-glucose)—but yeah, you're right. You have probably had glucose syrup (or confectioners syrup) at some point in your life in the way of candy (rock candy, gummy bears, some taffies). If you're in the USA, though, most of this was put aside for HFCS.

CBachelor17MemberRight, theres a Natural Market i frequent that carry's Glucose Syrup. Maybe Ill give it a try just for fun. I usually just put a little bit of Jelly or load up on sugar free syrup.

Obviously it varies depending on refinement, but I've seen it being around 20-40% fructose. I wouldn't call that very high, but if you're trying to limit overall fructose intake it could hinder that goal...esp since more is generally tastier in terms of maple syrup.
