Good job and nice to see you are in good health. I can't even begin to list off how many people i know with PCOS or Celiac disease ( maybe not as extreme as yours ) that i try to help by recommending a gluten free diet and they don't even want to try. I hear excuses like ” well maybe if it gets worse ” or ” thats what my family eats i can't just change” When i see people who are willing to help themselves like you, and make the changes necessary, it gives me that little bit of faith in humanity that tends to slip away sometimes.
