I'm looking into a program for my parents to lose some weight. The only exercise they do is walking, maybe 3-4 nights a week. Would Carb Nite be appropriate for them? Or some kind of modified program?

Carb Nite is a very good choice for people who don't exercise (or just do walking). It should work fine for them.
