I'm sure the answer to this is “it really doesn't matter”, but I'm curious anyway.Do you guys still have a PWO shake during your 5/3/1 deload week, or only on weeks when you're trying to fuel muscle growth?

A PWO shake certainly wouldn't hurt.During deload weeks, you can still do some relatively difficult assistance work while backing off of the main lifts. Working smaller muscle groups won't wear you out as much as deadlifting or overhead pressing so you can still keep up the intensity of the smaller exercise, making a PWO shake beneficial.

Yeah I scale my assistance exercises on deload weeks depending on how I'm feeling. Some weeks I feel strong and awesome and still do assistance work at max capacity. Some weeks I feel like I need the deload, and scale even assistance work back to like 75%.

Yes, you should still use a PWO on deload week unless you're in extreme fat loss mode.  At the very least get some whey in PWO.
