AlcaParticipanti eat different veggies now…when i started it was cauliflower broccoli and spinachnow I add paprika, onions, bell peppers, garlic, tomatoes, because it actually tastes far better.And since I am allowed to fry veggies in coconut oil / butter, I love brussel sproutsIt doesnt look like Fibre being that important, I dont shoot for 30-50g of a fibre a day... just eat some veggies and everything is fine, never had any issues because of fibre or no fibre

vegetables are in no way required for a healthy diet.. just makes it easier to get certain micronutrients in and of course some people do enjoy the taste of some vegetables

Tracy JarchowParticipantMy personal favorite is broccoli mash. I heat a big ole stalk of broccoli and add a half a brick of Kerrygold salted butter and put in the food processor and turn into baby food. I LOVE IT!

Mashed and steamed turnips are actually traditional sides in Scotland, served with haggis and potatoes. Very tasty.And now I want haggis.

Charles T GrimsleyMemberI am a roasted brussel sprouts guy and they end up being great cold too. Also if you are in a pinch and really concerned about your greens. Blend spinach and add it to your protein shake. You can't taste the spinach and if you get it blended well the consistency isn't bad either.

Haggis is a love it or hate it dish. It's basically organ meats stuffed ino a sheep's stomach and cooked like a sausage, but I love the stuff, and it's perfect for cold weather.It's traditionally made with oats in the mix, but homemade wouldn't be hard to make ulc or gluten free.
